Ingredients

  • canned lychees in syrup
  • 8 blueberries
  • dry sparkling wine

Instructions

  • Strain lychees from syrup. Reserve syrup for the drink.
  • Assemble the eyeballs by placing a blueberry in the center of a lychee. Skewer the lychee on a cocktail pick. Repeat, so there are two lychees on each pick. Skewer towards the top of the lychee, so the lychees don’t tip over when placed on the glass to garnish.
  • Pour 1 oz of reserved lychee syrup in a coupe glass and top with sparkling wine. Garnish with the the lychees on a cocktail pick. Repeat for additional drinks.

Notes

The lychee and blueberry eyeballs can be assembled in advance. Mix syrup and sparkling wine just before serving to maintain bubbles. Remaining lychees and syrup can be stored together in an airtight container in the fridge for up to a week. To make a mocktail version of this drink, simply sub the wine for a high-quality sparkling water, like San Pelligrino.
