Our Blue-Eyed Zombie Mimosa is just as delicious as it is spooky. Mix up this easy and elevated cocktail with only three ingredients for a Halloween gathering with your coven.

Lychees have a unique flavor with a texture similar to grapes, but a sweeter taste like strawberry and pear with a hint of florals. When we lived in New York in the aughts, we were on lychee martini kick and frequented Verlaine on the Lower East Side for happy hour with their signature Lychee Martinis and Five Spiced Calamari. We shudder to think about how many lychees were consumed during our time in New York!

It can be difficult to find fresh lychees unless you live near a specialty Asian grocery. But the canned lychees are what we want to use here because the syrup that the lychees come in is perfect for cocktails. The canned lychee syrup is sweet, so we recommend a dry sparkling wine to balance the sweetness.

When shopping for the wine, look for the word “brut” on the label, which indicates that it has the least amount of sugar per liter. We prefer dry sparkling wines from France or Spain (called cava). We love La Burgondie Crémant de Bourgogne Brut Réserve from Trader Joe’s (pictured below). It’s delicious on it’s own or mixed into a cocktail. Plus, it’s a great price point at about $12 per bottle.

Our Blue-Eyed Zombie Mimosa (Lychee Mimosa) is just as delicious as it is spooky. Mix up this easy and elevated cocktail with only three ingredients for a Halloween gathering with your coven.

canned lychees in syrup
blueberries
dry sparkling wine

method

Step 1

Strain lychees from syrup. Reserve syrup for the drink.

Step 2

Assemble the eyeballs by placing a blueberry in the center of a lychee. Skewer the lychee on a cocktail pick. Repeat, so there are two lychees on each pick. Skewer towards the top of the lychee, so the lychees don’t tip over when placed on the glass to garnish.

Step 3

Pour 1 oz of reserved lychee syrup in a coupe glass and top with sparkling wine. Garnish with the the lychees on a cocktail pick. Repeat for additional drinks.

The lychee and blueberry eyeballs can be assembled in advance. Mix syrup and sparkling wine just before serving to maintain bubbles. Remaining lychees and syrup can be stored together in an airtight container in the fridge for up to a week. To make a mocktail version of this drink, simply sub the wine for a high-quality sparkling water, like San Pelligrino.
