Honey Yuzu Sour

Our Honey Yuzu Sour is an elevated mocktail with a balance of sweet and sour. To mimic a traditional whiskey sour, we added aquafaba to the cocktail shaker to get a foamy top.

Ingredients

  • 1 1/2 oz yuzu juice
  • 1 oz honey simple syrup
  • 3/4 oz aquafaba
  • sparkling water
  • dried orange slice for garnish

Instructions

  • Make honey simple syrup by combining 1/2 c of honey with 1/2 c of water in a small saucepan. Over medium heat, bring to a simmer. Reduce heat and stir until honey has dissolved, about 3 mins. Set aside to cool. (see notes below).
  • In a cocktail shaker, combine the yuzu juice, honey simple syrup, and aquafaba (see notes below). Dry shake (no ice) for about 30 seconds to build the foam. Add a handful of ice to the shaker and shake for another 15 seconds.
  • Strain into a rock glass over ice and top with sparkling water. Garnish with half a candied orange slice and serve immediately.

Notes

Honey simple syrup can be stored in an airtight container in the fridge for about a month. Aquafaba is the liquid in canned beans, typically chickpeas (garbanzo beans). We strained the canned liquid from the chickpeas into an airtight bottle. We recommend a no salt added or low sodium version so as to not affect the taste of the drink.
