For Taylor Swift’s Eras Tour, we created a series of mocktails inspired by her songs and albums. After The Life of a Showgirl was released, we knew we needed to add to our Taylor Swift Mocktails with a new drink. “Honey” is a sweet and sour song about how a new love calls her “honey” after she’s only been called pet names in a passive aggressive way previously. We love the upbeat, poppy vibe of the song and think it’s an underrated gem on the album.
Our Honey Yuzu Sour is an ode to the sweet and sour song with sweetness from the honey simple syrup and sour from the yuzu juice. Yuzu is an Asian citrus fruit that is typically described as a mix between lemon, grapefruit, and orange. It’s difficult to find fresh yuzu when not in season, so we opted for bottled in this recipe. We also gave a nod to the line “I like my whiskey sour” from “CANCELLED!” by creating a foam with aquafaba to mimic a traditional whiskey sour cocktail. Even non-Swifties will love this mocktail version!

Honey Yuzu Sour
Our Honey Yuzu Sour is an elevated mocktail with a balance of sweet and sour. To mimic a traditional whiskey sour, we added aquafaba to the cocktail shaker to get a foamy top.
ingredients
1 1/2 oz yuzu juice
1 oz honey simple syrup
3/4 oz aquafaba
sparkling water
dried orange slice for garnish
method
Step 1
Make honey simple syrup by combining 1/2 c of honey with 1/2 c of water in a small saucepan. Over medium heat, bring to a simmer. Reduce heat and stir until honey has dissolved, about 3 mins. Set aside to cool. (see notes below).



Step 2
In a cocktail shaker, combine the yuzu juice, honey simple syrup, and aquafaba (see notes below). Dry shake (no ice) for about 30 seconds to build the foam. Add a handful of ice to the shaker and shake for another 15 seconds.



Step 3
Strain into a rocks glass over ice and top with sparkling water. Garnish with half a dried orange slice and serve immediately.

Honey simple syrup can be stored in an airtight container in the fridge for about a month. Aquafaba is the liquid in canned beans, typically chickpeas (garbanzo beans). We strained the canned liquid from the chickpeas into an airtight bottle. We recommend a no salt added or low sodium version so as to not affect the taste of the drink.
