These skewers are a hit every time we make them. The star of the show is the beautifully red Peruvian pearl peppers. They are sweet and tangy with a great pop. Elaine’s mother-in-law introduced us to them a few years ago, and they are a staple on any antipasto platter. Combined here with the salty olives and creamy mozzarella, and you’ve got the perfect one-bite appetizer.
Sic ’em Skewers
For our Game Day Party, we wanted to create an appetizer in signature red and black! We combined marinated pearl-sized mozzarella with sweet Peruvian pearl peppers and salty black olives.
Ingredients
4 oz mozzarella pearls
3 Tbsp olive oil
1 tsp lemon zest
1/2 tsp thyme
1/2 tsp oregano
pinch of red pepper flakes
12 black olives
12 sweet Peruvian pearl peppers
method
Mix mozzarella pearls in a bowl with olive oil, lemon zest, thyme, oregano, and red pepper flakes. Cover and marinate in the fridge for two hours to overnight.
To assemble the skewers, layer pepper, mozzarella, black olive, and mozzarella on a bamboo pick or metal cocktail pick (we recommend: Viski Gold Cocktail Picks). Continue assembling until all skewers have been used. Place on a platter for serving.
Yield: 12 skewers (mozzarella will be leftover to assemble more skewers as needed).

We used red and black to cheer on the Dawgs, but you could change up to your team colors!
Short on time? Assemble the skewers without marinating the mozzarella pearls. Drizzle with some olive oil and a sprinkle of sea salt.
