Bacon wrapped dates are a classic appetizer and a crowd favorite. Here, we wanted to elevate and lighten up that classic by using prosciutto instead of bacon and adding basil to the cheese mixture to give it a fresh taste. The addition of mascarpone cuts some of the tanginess of the goat cheese to give a creamy filling that when mixed with the fresh basil truly pops. The thinly sliced prosciutto slightly crisps in the oven to add a salty bite that complements the sweet dates. Medjool dates are rather large, so you’ll only use half of a date for each one. By using just a half, these become easy one-bite appetizers with a perfect combination of sweet, salty, and creamy.

Prosciutto Wrapped Stuffed Dates

Sweet, chewy dates are stuffed with a fresh, creamy basil and cheese mixture then wrapped in salty prosciutto in this easy appetizer.

ingredients

4 oz goat cheese, at room temperature
4 oz mascarpone cheese, at room temperature
1/4 c fresh basil leaves, finely chopped
16 Medjool dates, pitted and halved
16 slices of prosciutto, halved lengthwise

method

Step 1

Preheat the oven to 350°. Line a large baking sheet with parchment paper.

Step 2

Mix the goat cheese, mascarpone cheese, and basil together in a small bowl. Season with salt and pepper to taste.

Step 3

Take one half of a date and place a small spoonful of the cheese mixture on the cut side. Then wrap a piece of prosciutto around the date. Place on a parchment-lined baking sheet.

Step 4

Stuff and wrap remaining dates. Bake at 350° for 5-10 mins. Arrange the dates on a platter and serve.

Dates can be served hot or at room temperature. Uncooked dates can be stuffed and wrapped a day in advance. Heat just before serving. These stuffed dates are a great appetizer to serve at dinner parties or bring to a potluck.
