We have been making a version of this Watermelon & Arugula Salad with Cucumber, Feta, & Mint for over a decade. In fact, Elaine made this salad for Erin’s Bachelorette weekend in the summer of 2016! It was huge hit, and all the girls asked for the recipe afterwards.

The peppery arugula and crisp cucumbers are complemented by the sweet and juicy watermelon. Then we add in a salty and creamy bite from the crumbled feta. We top it all off with a good drizzle of olive oil and reduced balsamic. The mint gives a fresh, cool flavor that enhances the whole salad.

Over time, we’ve perfected the recipe how we like it, but you really can’t mess it up. Add more or less of the ingredients as you like! We also used to make the balsamic glaze from scratch by reducing balsamic vinegar in a saucepan. But Trader Joe’s has an amazing Balsamic Glaze, which makes this recipe even easier. Arrange the ingredients on a platter, drizzle, sprinkle, and serve!

Watermelon & Arugula Salad

This summer salad is sweet & salty, crunchy & cool – plus it comes together with simple ingredients in just minutes!

Ingredients

5 oz arugula
3-4 cups watermelon, cubed (about 1/8 of a large watermelon)
2 mini or Persian cucumbers, halved and sliced
4 oz feta cheese, crumbled
cold-pressed extra virgin olive oil
balsamic glaze or reduced balsamic vinegar
flaked sea salt, we recommend Maldon
handful of fresh mint, chopped

Method

Step One

Arrange arugula on a large platter. Top arugula with cubed watermelon.

Step Two

Add sliced cucumber and crumbled feta.

Step Three

Drizzle with olive oil and balsamic glaze. Sprinkle with mint and flaked sea salt to taste. Serve immediately.

Serving Tips

We recommend serving this salad immediately, so that the ingredients stay fresh and crunchy. If you want to make in advance, prep the ingredients separately and then prepare just before serving.

This salad is great for the summer and warmer months when watermelon is in season. Bring as a side to a cookout for Memorial Day or 4th of July. It’s also great for a dinner party served with lamb burgers. You can easily make this salad larger for a crowd or smaller for an intimate dinner.
