Summer Snack Skewers are an easy and elevated appetizer that takes minutes to make but looks beautiful and seasonal on a platter. The peach skewers are a spin on a traditional Caprese, but we’ve substituted peach for the tomato. Peaches give a little extra sweetness to the creamy mozzarella and fresh basil.
The watermelon skewers are like our Watermelon & Arugula Salad on a stick. Sweet, juicy watermelon is paired with salty feta, fresh mint, and crunchy cucumber. A delicious summer bite that hits all the flavor notes you’d want. Grab a feta block in brine versus crumbled feta. Feta in brine is creamier and not as dry, so you’ll be able to cut it up in to bite-sized pieces that’ll go on a skewer.

Summer Snack Skewers
Two easy appetizers using sweet summer fruits with creamy cheeses and fresh herbs that look fancy but take minutes to make.
ingredients
1 ripe peach, cut into bite-sized pieces
8 mozzarella ciliegine, cut in half
16 small basil leaves, or 8 large cut in half
1 cup watermelon, cut into bite-sized pieces
2 oz feta in brine, cut into bite-sized pieces
16 small mint leaves, or 8 large cut in half
1 Persian or mini cucumber, halved and cut into bite-sized pieces
cold-pressed extra virgin olive oil
flaked sea salt
balsamic glaze

Step 1
Assemble the peach skewers: peach, basil, then mozzarella.
Step 2
Assemble the watermelon skewers: watermelon, feta, mint, then cucumber.

Step 3
Once all skewers are assembled, drizzle with olive oil and balsamic glaze, then sprinkle with flaked sea salt. Arrange on platter and serve.
serving tips
The skewers can be assembled in advance, but we recommend waiting until just before serving to add the finishing touches (olive oil, balsamic glaze, and sea salt). Summer Snack Skewers are a great appetizer for any summer gathering – BBQs, pool parties, backyard dinner parties – when these fruits are in season. This recipe makes 16 skewers of each type (32 total), but it’s easy to scale up for a larger crowd.
