Sweet Cherry Galette is our favorite way to use summer cherries before they’re gone. Cherry season begins as early as mid-May, but cherries really peak in July. This galette is perfect for backyard cookouts, Americana celebrations, or any summer party that needs an easy and elevated dessert. The fruit is lightly sweetened with only 1/4 cup of sugar, so if your cherries aren’t sweet on their own, we’d recommend adding in a couple extra tablespoons.
Galettes are a freeform pie that gets its charm from the rustic style of folding the dough over the juicy fruit in the center. We love how simple this dessert is to make, especially when using store-bought pie dough. If you’re feeling fancy, feel free to use a homemade dough here.
We recommend a cherry pitter to make the task of removing the pits much easier (you can also use it for olives). However, if you don’t want to invest in one, you can use a metal straw to push the pit out. It’s a bit more labor intensive, but it works in a pinch! We just bought this multi-cherry pitter, which we’re looking forward to using. It pits six cherries at once, which will make this galette even easier to make.

Sweet Cherry Galette
Our favorite way to use summer cherries before they’re gone. This sweet cherry galette is buttery crust and juicy fruit without the fuss of traditional pie.
ingredients
one pie crust, store-bought or homemade
3 – 3 1/2 cups sweet cherries, pitted
1/4 cup granulated sugar, plus more for sprinkling
1 Tbsp tapioca flour or cornstarch
juice of 1/2 lime
1 egg beaten
lightly whipped cream, for topping



method
Step 1
In a medium bowl, combine the cherries, sugar, tapioca flour, and lime juice.


Step 2
Heat oven to 400°. Gently roll pie crust out and transfer to a baking sheet lined with parchment paper. Spoon filling onto the pie crust. Leave a border of about 2 to 3 inches.



Step 3
Fold the dough border over the cherries, pleating the edges gently and Leave the center open. Brush the crust with the egg wash and sprinkle with sugar.


Step 4
Bake for 30-35 minutes until the crust is golden and the juices inside are bubbling. Cool for 20-30 minutes on a wire rack. Serve warm or at room temperature with lightly whipped cream.

Galette can be served warm or at room temperature. We recommend topping with lightly whipped cream, but vanilla ice cream or gelato would be delicious here, too. Galette can be stored at room temperature in an airtight container for a few days or up to a week in the refrigerator. Make when cherries are at their peak in the summer months with July being peak season. Perfect for backyard cookouts, 4th of July celebrations, or any summer party that needs an easy and elevated dessert!
